Unlike audio (and even easier, MIDI), you can't get POV to compile in real
time. So how would this work? There have been some attempts to render POV
scenes using OpenGL, but none (that I know of) with the types of sliders and
knobs that Max/MSP offers.
FYI - Max/MSP (long a Mac-only app) has recently been released for Windows.

Coming from the sound synthesis world, have a look at CsoundAV, which uses
OpenGL to render sound and images in real time:
